Hearty Beef Stew - S*
Serves 6-8
Ingredients:
2 cups soaked, cooked kidney beans
1 lb ground beef, cooked and drained
1 medium onion, diced
2=3 bell peppers, diced
3-4 T olive oil
2-3 T Creole seasoning
1 T brown sugar
Salt and pepper

Ingredients:

2-3 T Creole seasoning
1 T brown sugar

Directions:
- *add olive oil to hot enamel cast iron pot, wait until hot and popping.
- * add diced onions and cook until getting translucent
- *add diced peppers and seasonings and sugar, stirring well to prevent over cooking.
- *when peppers are soft, add the beans and beef and enough water to just cover everything by 1 inch.
- *allow to simmer until the beans have merged with the water, and liquid is reduced. About 1-2 hours.
- *serve with shredded cheese, sour cream, etc.
