Enchilada Chicken Tostadas

Enchilada Chicken Tostadas
Serves 4-6

Ingredients:
2 large chicken breast
1 can red enchilada sauce
1/3 can of green chilis
1 cup shredded cheese
2 cups homemade mashed black beans
Corn tortillas
oil for frying

Directions:
  1. Into your crockpot, place the chicken, enchilada sauce and green chili's. Set to low, and cook all day. 
  2. Into a small pan, put the pre-cooked beans into it, add a little water, and heat through. Add seasonings of choice, I add garlic and onion powder, with a little salt. Mash it altogether until smooth or slightly chunky. I prefer a combo of both! lol 
  3. 30-40 mins before eating, put enough oil into a heavy bottomed pan, and heat until sizzling. 
  4. Get out enough corn tortillas for your family, I'll be using 5 for my family, and fry them, one at a time, until nice and crisp!
  5. Plate it up, and top with shredded cheese. 


* If you plan to have this as an E, go very light with the cheese! This is an E, with the beans and tortillas. I plan to have just one tortilla, and no beans, so it'll be an S with the cheese.
