Spicy Mock Jambalaya - Deep S









Odd Jammbie - Deep S
Serves 6-8
6 people - 2 cups portion
8 people - 1 ½ cups portion

8 cups water/chicken broth
6 cups chicken from thighs, shredded
1 cup frozen okra
4 cups zucchini, half peeled, and all cubed
⅓ cup diced onion
1 red bell pepper, diced
1 large head of cauliflower,’riced’
2-3 teaspoons creole seasoning
1 hot turkey sausage link, cut small
⅔ cup peas


  • Put okra and half the zucchini into a bowl, and use a stick blender to blend it really well. *
  • Add everything to a stock pot, and cook on low to medium until all veggies are soft, and flavors meld together. (About 2 hours)
Serve with a side of Swiss bread, top with sour cream, butter, chives!If you add the sour cream it's not a Deep S, so beware!!!!!!!!!

*my family doesn’t like okra, so I blend it, to hide it! If your family doesn’t mind it, toss it in whole, or blend it. Blended tends to make this creamy in texture, and looks.

Hearty Beef Stew - S

Hearty Beef Stew - S*
Serves 6-8


Ingredients:
2 cups soaked, cooked kidney beans
1 lb ground beef, cooked and drained
1 medium onion, diced
2=3 bell peppers, diced
3-4 T olive oil
2-3 T Creole seasoning
1 T brown sugar
Salt and pepper

Directions:
  1. *add olive oil to hot enamel cast iron pot, wait until hot and popping.
  2. * add diced onions and cook until getting translucent
  3. *add diced peppers and seasonings and sugar, stirring well to prevent over cooking.
  4. *when peppers are soft, add the beans and beef and enough water to just cover everything by 1 inch.
  5. *allow to simmer until the beans have merged with the water, and liquid is reduced. About 1-2 hours.
  6. *serve with shredded cheese, sour cream, etc.

Fat: 17

Next time I make it, I'll add celery and some other vegetables.

*This is JUST an S, so go easy on the serving sizes, :)
