Our Autumn Bucket List

Yeah, I'm totally going here! ;)

Autumn has become my Tied-with-Winter favorite season! A huge score in it's favor, is that my children are all Fall babies. So naturally, this time of year, we think about what we want to do with them, to celebrate their births. One loves trains, the other loves animals, dolls, and the like. It's the perfect time to figure out what we'll be doing as a family.

So without further ado, our bucket list:

  1. Visit the Grande Canyon
  2. Make cookies
  3. Stargaze
  4. Bonfire & S'Mores
  5. Bake Pumpkin Bread
  6. Scenic Drive and Picnic
  7. Burn Fall scented candles
  8. Pick Your Own Apples
  9. Make Apple sauce
  10. Make Apple Fritters
  11. Make Spiced Apple Cider
  12. Photo shoot
  13.  Make Apple Crisps
  14.  Make Chili

That's it, just 14. Some have lists for days...and I wonder how they do it all. Our choices are frugal(#1 and #8 will cost a bit more to do, so we'll do one in Sept and one in Oct!), and will make plenty of amazing smells in the kitchen! I cannot wait.

What are you're Autumn/Fall plans?!

Leftover Pumpkin Soup

Sometimes, you have a ton of things that NEED to be eaten, and you don't know how to make it taste yummy.
Then inspiration hits, and you dig out that rather large can of pumpkin puree, and make a wonderful, Fall inspired, meal, that is reminiscent of Thanksgiving feasts.

I give you, my Pumpkin Soup recipe!!

Pumpkin Soup - E
Serves 8

1 S-M Onion, diced
2-3T olive oil, or butter
⅓ C red wine
1 L can Pumpkin puree
1 cup milk of choice
2 cups water
1-2 T of each of the following: sage, cumin, garlic powder
Salt and pepper to taste
Optional: diced chicken, diced turkey
Optional toppings: Greek Yogurt 0%, green onions, roasted radishes - diced.

Directions:
  • Caramelize the onions in oil, or butter. Add wine when translucent. Allow to cook for 2 minutes.
  • Add the puree, milk and water, stirring well.
  • Add spices, mix.
  • Allow to simmer for 30 minutes.
  • Serve with warm bread, and side salad

** I follow Trim Healthy Mama, so most of my recipes will have either an S, E or FP on them, and if you're curious about it all, just ask! Thank you
